Recipe for Quick Omega-3 Raw Brownies (Gluten-free; Soy-free; Dairy-free)

The Uplift Omega-3 is the bar that Dr. Nedley developed, mainly for people who were not inclined to prepare their own Omega-3 dishes. If, on the other hand, you DO like to make the odd tasty, healthy dish to give your brain a boost, you might enjoy some of the recipes that I will be including on this website.  I do not intend to use Dr. Nedley's recipes since his wife, Erica, will be publishing a cookbook soon and it doesn't seem fair to share the recipes that they have developed.  However, I do have a number of great tested recipes that include many of the high Omega-3 and folate-containing ingredients that Dr. Nedley talks about in his book and on his videos in the Depression Recovery program.  I hope you enjoy them!

The following recipe for "Quick Raw Omega-3 Brownies" is a favourite in our house.  It is high in Omega-3 and other nutrients, and does NOT contain gluten or soy.  A food processor is a must although I guess it might be possible to do this with many goes in a blender (let me know if you accomplish this).

INGREDIENTS:
2 C. shelled Walnuts
12 (or more) Medjool or other soft dates (pitted)
1/2 C. unsweetened Coconut shreds (or more)
3/4 C. (or more) Raw Carob Powder
1 T melted Virgin Coconut Oil (melts over hot water)
1 T. organic Vanilla (no alcohol)

METHOD:
  • Pulse the walnuts in the food processor until very fine.
  • Add the other ingredients and pulse together until a homogenous mass forms
  • Press mass into a small pan and refrigerate until completely firm
  • Not sticky enough to hang together?  Add more dates.  And/Or a little maple syrup.
