Recipe for Quick Omega-3 Raw Brownies (Gluten-free; Soy-free; Dairy-free)
The following recipe for "Quick Raw Omega-3 Brownies" is a favourite in our house. It is high in Omega-3 and other nutrients, and does NOT contain gluten or soy. A food processor is a must although I guess it might be possible to do this with many goes in a blender (let me know if you accomplish this).
INGREDIENTS:
2 C. shelled Walnuts
12 (or more) Medjool or other soft dates (pitted)
1/2 C. unsweetened Coconut shreds (or more)
3/4 C. (or more) Raw Carob Powder
1 T melted Virgin Coconut Oil (melts over hot water)
1 T. organic Vanilla (no alcohol)
METHOD:
- Pulse the walnuts in the food processor until very fine.
- Add the other ingredients and pulse together until a homogenous mass forms
- Press mass into a small pan and refrigerate until completely firm
- Not sticky enough to hang together? Add more dates. And/Or a little maple syrup.
