Tahini-Hemp Heart Chip Cookies (No Eggs) (Gluten-Free) (Dairy-Free)


I went looking for a recipe that would offset some of what others might see as a post I just did slamming fish as an appropriate source of Omega-3 essential fatty acids. I looked at a few recipes, looked into my fridge, and came up with the following Tahini (Sesame Seed Butter)-Hemp Heart- Carob Chip Recipe that is reminscent of sesame seed snaps (made in Poland)but with a shorter shelf life (lol) and no refined cane sugar. No flour (and no gluten). I gotta say, these little cookies are a healthy yummy GF- high Omega-3 addition to my Christmas treats list. Happy Brainy Christmas! Hope you enjoy them also!

Ingredients:

1 "Flax-egg" (1 T. ground Flaxseed mixed with 3T. water)

1 cup of Tahini (Sesame Seed Butter)

1 cup of Hemp Hearts (shelled seeds)

1/2 cup of Coconut Palm Sugar

Handful of Carob Chips

Handful of Dried Cranberries

Directions:

1. Preheat oven at 350º degrees

2. Combine all the ingredients except Carob Chips and Cranberries in Food Processor and pulse until well mixed. Scrape into bowl and add in Carob Chips and Cranberries, and combine well.

3. Take a spoonful of mix and roll into a ball. Lay on a cookie sheet and flatten with a fork

4. Bake until golden brown (10-15 minutes)
