Tahini-Hemp Heart Chip Cookies (No Eggs) (Gluten-Free) (Dairy-Free)
I went looking for a recipe that would offset some of what others might see as a post I just did slamming fish as an appropriate source of Omega-3 essential fatty acids. I looked at a few recipes, looked in my fridge, and came up with the following Tahini (Sesame Seed Butter)-Hemp Heart- Carob Chip Recipe that is reminiscent of sesame seed snaps (made in Poland)but with a shorter shelf life (lol) and no refined cane sugar. No flour (and no gluten). I gotta say, these little cookies are a healthy, yummy GF- high Omega-3 addition to my Christmas treats list. Happy Brainy Christmas! Hope you enjoy them also!
Ingredients:
1 "Flax-egg" (1 T. ground Flaxseed mixed with 3T. water)
1 cup of Tahini (Sesame Seed Butter)
1 cup of Hemp Hearts (shelled seeds)
1/2 cup of Coconut Palm Sugar
Handful of Carob Chips
Handful of Dried Cranberries
Directions:
1. Preheat the oven to 350º degrees
2. Combine all the ingredients except Carob Chips and Cranberries in a food processor and pulse until well mixed. Scrape into bowl and add in Carob Chips and Cranberries, and combine well.
3. Take a spoonful of the mix and roll it into a ball. Lay on a cookie sheet and flatten with a fork
4. Bake until golden brown (10-15 minutes)
